After Cataphracts become Knights, they gain +25 hit points, +1 attack strength, +1 line of sight, +1 moves, meaning they move about 0.1 tiles per second faster, and also attack faster, having -5 attack cooldown, which translates to about 0.3 seconds less delay between strikes, further increasing the total damage they can inflict over time.
Knights will soundly beat up most units, except for Heavy Infantry, and if enough of them can defeat any force, as long as they are properly supported, because powerful as they are, they will still need some cover fire against Heavy Infantry, support for taking down buildings, and maybe some assistance against evasive Ranged Cavalry if present.
